Coconut Matcha Bliss Balls

Ever crave a delicious treat that you can quickly grab, whether on-the-go or simply enjoying some me-time on the couch (insert mental picture of cozy blanket, suspense novel and fuzzy socks)? You don’t have to answer, we all know it’s a hard “yes”. As a lover of matcha, coconut and bliss, I wanted to create something that checks all the boxes: delicious, healthy, easy to make and an energizing bonus (cue the clean caffeine). Whip these beauties up on a weekend and keep them in your fridge to grab throughout the week, but be warned, they won’t last through Wednesday!

Coconut Matcha Bliss Balls

THE RECIPE

Ingredients:

  • 1/2 cup Cashews, soaked

    • Tip: I soak mine for 30 minutes in boiling water to save time!

  • 1/2 cup Oats, rolled

  • 1/2 cup Shredded Coconut, divided

  • 3 tablespoons Honey

  • 1 tablespoon Navitas Matcha Powder

  • 1 tablespoon Coconut Oil

  • 1/4 teaspoon Vanilla

Blend 1/4 cup of coconut and all other ingredients in a food processor until there's a crumbly consistency. Roll 1 heaping tbsp of dough into balls with your hands and then roll in the separated 1/4 cup of shredded coconut. Place on a parchment lined baking sheet and toss in the fridge for 30 minutes or until set. Enjoy :)
